For the patriotic vegan, Independence Day parties can be a minefield of smelly smoked meat, congealed sour cream, limp neon cheese slices and...well, you get the drift. Here is Babe's recipe for a fab 4th without a whiff of whey or cow flesh:
-Babe's favorite healthy salad: toss chopped romaine,
Gardein chick'n strips, rinsed black beans, raw corn, tomatoes, red onion and avocado slices with a little bit of olive oil, lime juice and sea salt (for the chopped kale version, marinate the leaves in the oil/lime mix overnight to soften)
-Zapp's Spicy Cajun Crawtators Potato Chips (available in
bulk and in
individual bags) or New York Naturals' "cheese" kale
chips (very pricey, but very yummy)
-Vegan, gluten-free red, white & blue
cupcakes are a must
-So Delicious Coconut Water
sorbet is totally refreshing and low cal
